Gently Spiced Meatballs
Ingredients
For the meatballs:
- 1kg mince
- 50g breadcrumbs
- salt and pepper to taste
- 2 eggs – beaten
For the sauce:
- 75g butter
- 1 large onion – chopped
- 1 clove garlic – crushed
- 2 tbsp flour
- 500ml stock (beef or vegetable)
- 6 dsp Tracklements Green Tomato Chutney
Cooking Directions
Serves: 4
Preheat oven to 350°F/175°C
Mix the mince, bread crumbs, salt and pepper and eggs together and form meatballs in whatever size you prefer. Then bake in a covered casserole dish for 35 mins. Drain off any excess fat.
Meanwhile, melt the butter in a large pan and sauté the onion & garlic until soft. Add the flour, stirring constantly and cook for a further minute. Gradually add the boiling stock and whisk into a smooth texture. Pour over the meatballs and cook uncovered for 20-30 mins, then add the Green Tomato Chutney and return to the oven for 5 mins. Serve with Basmati rice.
